Roasted Beets and Carrots Salad

Total Time: 55-70 minutes
Ingredients - 6 small beets, washed and unpeeled
- 6 medium carrots, washed and unpeeled
- ½ tablespoon red onion, finely chopped
- 2 tablespoon chives, finely chopped
- 1 tablespoon cilantro, finely chopped
- ½ tablespoon cayenne pepper (optional)
- 3 tablespoons olive oil
- 3 tablespoons lemon juice
- ¼ teaspoon salt
Preparation
Spread beets and carrots across large oven safe plate
Cover with aluminum foil
Bake them for 45-60 minutes in a 350 degrees temperature, or until tender
Remove from the oven, unpeel (optional) and dice as wanted
In a medium bowl combine diced beets and carrots, red onion, chives, cilantro, cayenne, olive oil, lemon juice and salt
Toss until it is well combined
Serve
