Rice and Potato Flour Bread

Preparation Time: 15 minutes plus 30-40 minutes for dough to rise
Cook Time: 40 minutes
Total Time: 85-95 minutes
Ingredients
- 2 cups rice flour
- 3 tablespoons potato flour
- 3 tablespoon coconut sugar
- ½ teaspoon salt
- 1 ½ teaspoon instant active dry yeast
- 3 tablespoon butter or ghee, melted
- 1 cup coconut milk, warm
- 2 pasture raised eggs
Preparation
Step 1 (Activating Yeast)
In a small bowl combine yeast in a ¼ cup coconut milk and 1 tablespoon coconut sugar
Let it sit fot 5-10 minutes (it is going to double its size)
Step 2
Place in a medium size bowl the ¾ cup coconut milk, eggs, 2 tablespoon coconut sugar and butter
Using a hand mixer on medium speed beat until is smooth, about 2-3 minutes
Add the rice flour, potato flour and salt
Beat mixture on medium speed until it is combined, about 2-3 minutes
Add yeast (Step 1)
Beat for 20-30 seconds on low/medium speed
Step 3
Work with hands to bring the dough together and give it a form wanted
Lightly grease a loaf pan , and place the dough in it.
Step 4
Cover the dough with a tea towel and let rise for 30-40 minutes
Step 5
Preheat oven to 350 degrees
Bake for 40 minutes or until golden brown
