Wild Salmon Poached in Fresh Tomato Sauce

Ingredients
- 1 ½ pound wild boneless salmon, Skin in or off (optional), cut as wanted
- 2 tablespoons ghee, of fat of choice
- 1 large onion, finely chopped
- 8 garlic cloves, minced
- 5 large tomatoes, peeled and diced
- 10 fresh basil leaves
- ¼ teaspoon cayenne, finely chopped (optional)
- ½ teaspoon sea salt
Preparation
In a medium/large pan heat ghee over medium heat until hot
Add onions, stir occasionally, and cook it until is lightly brown, 8-10 minutes
Add garlic, stir occasionally, and cook it until it becomes golden brown, 5 minutes
Add tomatoes, stir occasionally, and cook it until very soft, 15-20 minutes
Add sea salt and cayenne, mix well, and cook 2 minutes
Slide wild salmon pieces into this sauce, cook until flesh is firm to the touch, about 2-3 minutes
Add Basil leaves
Gently remove from the pan with a spatula
Serve with the sauce
