Avocado, Portobello and Pickles Salad Salad

Ingredients
- ½- pound fresh Portobello or shitake mushrooms, sliced
- 1 medium red onion, julienned
- 1 tablespoon ghee or fat of choice
- 1 avocado, sliced
- 1 tomato, seeded and sliced lengthwise
- 2 pickles, julienned
- 2 tablespoons cilantro, chopped
- 3 tablespoons olive oil
- 3 tablespoons fresh lemon juice
- ¼ tablespoon sea salt
- Freshly grounded pepper
Preparation
Step 1
Heat a medium skillet with ghee over medium heat, until hot
Add onions and cook for 5 minutes, stirring frequently, until tender
Add mushrooms and cook for 2 minutes, stirring frequently
Transfer onions and mushrooms sautéed into a medium bowl and allow them to cool down
Step 2
In another bowl combine avocado, tomato, pickles and cilantro
Step 3
Combine all the ingredients together and season with olive oil, fresh lemon juice, sea salt and pepper
Serve immediately
