Eggplant Mini “Pizza” with Chimichurri Sauce

Serves: 4

Time Preparing: 15 minutes

Time Cooking: 20-25 minutes

Total Time: 35-40 minutes

Ingredients

- 1 big organic eggplant, cut into round slices

- 1 tablespoon coconut oil

- 6 tablespoons parmesan cheese, freshly shredded

- 6 tablespoons “chimichurri” sauce

How to Prepare Chimichurri and ingredients needed here

Preparation (Eggplant Pizzas)

Preheat oven 350 Degrees F

In a medium bowl, using hands coat both sides of eggplant slice with coconut oil

Spread the coated eggplant into bottom of a shallow baking dish lightly coated with coconut oil

Spread the parmesan cheese to cover evenly the top of eggplant slices

Roast for 20-25 minutes

Remove eggplants from oven

Top each eggplant slice with “chimichurri” sauce

Serve immediately
