Roasted Sardines

Ingredients
- 10 fresh sardines, cleaned
- 2 tablespoons ghee, melted
- Olive oil
- 1 organic red onion, finely sliced
- 3 garlic cloves, minced
- 3 tablespoons cilantro, finely chopped
- ½ tablespoon sea salt
- 4 tablespoons fresh lemon juice (one big lemon)
- Freshly grounded black pepper (optional)
Preparation
In a big bowl combine red onion, garlic, cilantro, sea salt, black pepper, lemon juice, and 1 tablespoon ghee (reserve 1 tablespoon), mix well
Place the sardines into this mixture and set aside to marinate for 15-30 minutes
Arrange the sardines in a single layer on the bottom of a shallow baking dish and pour the marinade evenly over the sardines
Preheat the oven to 350 degrees Roast the sardines for about 30-45 minutes until fish are golden and skin is crispy
Remove from the oven, drizzle olive oil as wanted
Serve immediately
