Shrimp Stew with Green Plantain

Ingredients
- 2 pounds wild shrimp, peeled and deveined
- 2 tablespoons ghee, or fat of choice
- 2 big onions, finely chopped
- 3 tomatoes, finely chopped
- 2 plantains (green or yellow), cut in 4-5 chunks
- 8 garlic cloves, minced
- 2 tablespoons cilantro, finely chopped
- ¼ tablespoon fresh cayenne, finely chopped (optional)
- ½ tablespoon sea salt
Preparation
In a large pot heat ghee over medium heat until hot
Add onions, stir occasionally, and sauté until tender, 5 minutes
Add garlic, stir occasionally and sauté until lightly golden, 2-3 minutes
Add tomatoes, stir well and cover with the lid, simmer for 5 minutes
Add plantains, mix well into the tomato sauce, simmer for 5 minutes
Add shrimp, stir gently, bring to a boil
Add sea salt, and cayenne, stir gently, simmer 1-2 minutes
Add cilantro, stir gently
Transfer to a serving bowl
Serve immediately
