Hearty Beef Stew with Potatoes

Ingredients
- 2 pounds pasture raised beef, (any stew meat), cut into small pieces
- 2 tablespoons ghee, or fat of choice
- 1 big red onion, chopped
- 8 big garlic cloves, minced
- 2 cups potatoes (5 medium potatoes), peeled and chopped into small pieces
- 2 tablespoons fresh cilantro, chopped
- ¼ tablespoon fresh cayenne, finely chopped (optional)
- ½ tablespoon sea salt
- 1 cup filtered water
Preparation
In a medium pot heat ghee over medium heat
Add onions, stir occasionally, sauté until lightly golden, 10 minutes
Add garlic, stir occasionally, sauté until golden browned, 5 minutes
Add beef, stir occasionally, sauté until browned, 10 minutes
Add potatoes, salt, fresh cayenne, and water, cover with the lid, simmer until potatoes are soft, 20-25 minutes
Add cilantro, stir well
Transfer to a serving dish
Serve immediately
