Green Plantain Purée with Fresh Cilantro

Total Time: 25-30 minutes
Ingredients
- 3 green plantain, peeled and cut in 4 pieces (lengthwise and middle)
- 1 small yellow onion, finely chopped
- 1 tablespoon ghee, or fat of choice
- 2 tablespoons grass-fed butter
- ¼ cayenne, finely chopped (optional)
- 3 tablespoons cilantro, finely chopped
- 3-4 cups filtered water
Preparation
Step 1
Place a medium pot with water over medium/high heat, bring to a boil
Add plantains
Reduce heat to medium, cook for 6-7 minutes
Remove from heat, reserve
Step 2
In a blender, carefully place cooked plantains and 1 cup of the water where the plantains were cooked (use more if needed to obtain a desired consistency)
Pulse until puree, about 2-4 minutes, reserve
Step 3
In a medium pot heat ghee over medium heat
Add onions, stir frequently, sauté until tender, 5 minutes
Add the pureed plantains, reduce heat to low
Add butter and allow it to completely melt, stirring frequently
Add cilantro, and fresh cayenne, stir well to mix
Remove from heat
Serve warm or cold
