Eating a Nutrient Dense Meal in a 15 Dollars Budget
Ground Lamb Burger, Potatoes and Tomatoes Salad – This recipe serves 2 meals
Time needed – 30 minutes
Ingredients Needed
- ½-a- pound ground lamb
- 4 bacon slices
- 3 medium potatoes, chopped
- Filtered water to cook potatoes
- 2 organic tomatoes chopped
- 3 tablespoon onion, 1 sliced, 2 chopped
- 1 avocado, sliced
- 8 black olives
- 2 tablespoons olive oil
- Juice of half a lemon
- Sea salt
- Freshly grounded pepper (optional)
- 2 tablespoons ghee or, fat of choice
- 2 tablespoons cilantro finely chopped
- 2 tablespoon marjoram, chopped
Preparation
Potatoes
Wash, peel, and chop potatoes
In a medium pot over medium heat place potatoes, water to cover completely, and ¼ teaspoon sea salt, bring to a boil
Cook until tender, 15-20 minutes
Remove from heat, carefully drain, reserve
Preheat a skillet over medium heat with one tablespoon ghee
Add garlic, stir frequently until golden, 2 minutes
Add potatoes, stir carefully and sauté until golden, 3-4 minutes
Garnish with fresh cilantro, reserve
Meanwhile the potatoes are cooking
Prepare burger
Place ground lamb in a medium bowl
Add 2 tablespoons chopped red onion
Add ½ teaspoon sea salt
Add freshly grounded black pepper to taste or, ¼ teaspoon cayenne
Add 2 tablespoons marjoram
Using hands, mix until well combined
Divide into two portions
Shape each portion into a patty
Wrap each burger with 2 slices of bacon, reserve
Heat a medium skillet with ghee over medium heat
Place the burger patties in the hot skillet, cook for 3-4 minutes
Flip the burgers, cook 3-4 minutes
Flip again until is golden brown or, your preferred doneness, reserve
Meanwhile sautéing burgers
Prepare Tomato Salad
In a medium bowl combine chopped tomatoes, 1 tablespoon sliced onions, olives, avocado, 1 tablespoon cilantro, lemon juice, olive oil, salt and pepper to taste, stir well to combine, reserve
Serving
In a plate serve burger and potatoes
And a side bowl with the tomato salad
Left overs can be used at diner or breakfast
