Roasted Pork Loin Stuffed with Prunes Jam
Serves: 6-8
Time Preparing: 30 minutes
Time Roasting: 150 minutes
Total Time: 180 minutes
Ingredients
- 4-pounds pork loin
- Bacon strips enough to cover the piece (used 24 stripes in this recipe)
- 2 tablespoons ghee, or fat of choice, melted
- 8 ounces dried prunes, no stones
- 1 ½ cup filtered water
- 5 garlic cloves minced
- 1 teaspoon sea salt
- Freshly grounded black pepper
Preparation
Step 1 (prunes jam)
In a small pot over medium heat combine dried prunes and water
Simmer for 20-25 minutes until prunes are very soft
Pour cooked prunes in a blender and pulse until smooth, reserve
Meanwhile cooking prunes
Step 2
Combine in a large bowl garlic, sea salt, black pepper, and melted ghee
Rub the mixture in the pork loin, reserve
Step 3
Preheat the oven 350 degrees Fahrenheit
Step 4
Place marinated pork loin in a cut board
Using a sharp knife carefully make an X shape opening in the middle of the pork loin (lengthwise)
Using a teaspoon stuff pork loin with the prunes jam, reserve
Step 5
Wrap pork loin with bacon strips side by side covering the whole piece
Carefully place it in an oven resistant dish lined with parchment paper
Roast for 150 minutes
Step 7
Remove from oven
Transfer pork loin to a serve plate
Slice carefully using an electrical knife, reserve
Step 8 (gravy)
Using the remain fat from the baking add a tablespoon of prunes jam, stir well to mix
Transfer grave to a bowl, reserve
