Pork Loin Stew with Vegetables and Fresh Herbs

Ingredients
- 1-pound organic pasture raised boneless pork loin, cut into 1-inch cubes
- 2 tablespoons ghee or, fat of choice
- 1 ½ cup coconut milk
- 1 red onionchopped
- 4 medium potatoes, cut into 8 pieces
- 3 medium carrots, chopped into large pieces
- 1 leek, sliced
- 10 black olives
- 8 Cherrie tomatoes
- 3 tablespoons green banana biomass (optional)
- ¼ tablespoon fresh cayenne, diced
- 1 teaspoon paprika grounded
- 6 whole cloves
- 1 tablespoon sea salt
- 1 tablespoon fresh cilantro, chopped (to garnish)
Preparation
In a large pot heat ghee over medium heat
Add onions, stir occasionally, sauté until tender, 5 minutes
Add pork loin, sauté until it is lightly golden, 10 minutes
Add coconut milk, potatoes, paprika, cloves, sea salt, stir until combined, partially cover with the lid, sauté for 15 minutes
Add carrots, green banana biomass and olives, stir well until combined, partially cover with the lid, sauté for 10 minutes
Add leek, Cherrie tomatoes, and cayenne stir well to combine, sauté until potatoes are soft, 5-10 minutes
Garnish with cilantro
Transfer to a bowl
Immediately serve
