Hearty Carrots, Potatoes and Chicken Stock Soup

Ingredients
- 2 ½ cups carrots, chopped
- 3 cups potatoes, chopped (5 medium potatoes)
- 1 large onion, chopped
- 8 garlic cloves, minced
- 5 cups chicken stock (recipes here)
- 3 tablespoons ghee or fat of choice
- ½ tablespoon sea salt
- ½ teaspoon cayenne, chopped (optional)
- Cream cheese to garnish
- Chives to garnish
Preparation
In a large pot heat ghee over medium heat
Add onions, stirring occasionally, sauté until lightly golden, 10 minutes
Add garlic, stirring occasionally, sauté until golden browned, 5 minutes
Add chicken stock, carrots, potatoes, sea salt, and cayenne, stir well to combine
Bring to a boil, reduce heat to medium low, simmer until potatoes are soft, 20-30 minutes, Remove from heat
Carefully, pour this mixture in a blender or food processor, pulse until pureed, 1-2 minutes
Transfer soup to a bowl
Garnish with 1 tablespoon creme cheese and chives
Serve immediately
