Christmas Cookies
Time Preparing: 20-30 minutes
Time Baking: 10-15 minutes
Total Time: 30-45 minutes
Ingredients
3 cups almond flour
½ cup rice flour
¼ cup grass-fed butter, melted at room temperature
1 tablespoon vanilla extract
½ cup coconut sugar (if want sweeter add more sugar)
1 tablespoon baking powder
½ tablespoon baking soda
1 egg
Preparation
Step 1
In a small bowl add almond and rice flour, baking powder and baking soda, reserve
Step 2
In a medium bowl add the egg and using a hand mixer beat until the mixture becomes fluffy and almost triples in volume, 2-3minutes
Add the coconut sugar, beat until well combined and creamy, 1-2 minutes
Add the melted butter and vanilla, beat until well combined, 1-2 minutes
Step 3
Slowly add the flour mixture to the eggs, sugar and butter mixture (step 1 plus step 2)
And mix using either a hand mixer on low speed or your hands until just combined
Step 4
Preheat oven to 350 degrees Fahrenheit
Transfer the dough to a work surface and divide into small portions
Roll out small portions of dough into a flat disc ¼ to ½ inch thick (depends on how you like it)
Using cookies cutters, cut out inspired shapes from the dough
Gather up and reroll the scraps and cut more cookies
Repeat it until dough is all shaped

Lightly grease cookie sheets with coconut oil
Arrange the shapes on baking sheets, spacing them about ½ inch apart
Bake the cookies until golden on the edge, 8-12 minutes (depends on the cookies cutters sizes)
Step 6
Remove from oven set aside and let them cool completely on the cookie sheet
Decorate the cooled cookies as desired or just enjoy it plain
Tip: you can add a little bit of cocoa powder or shredded coconut in part of the dough to make the cookies more fun and delicious
