Psyllium Husk, Green Banana and Tapioca Flour Bread

Ingredients
- 1 cup organic green banana flour
- ½ cup organic psyllium husk flour
- ½ cup of tapioca flour
- ½ organic green plantain, peeled and sliced
- 4 organic pasture-raised eggs
- 1 cup of organic unsweetened coconut milk
- 3 tablespoons organic coconut fat
- 2 tablespoons organic coconut sugar
- ½ teaspoon sea salt
- 1 tablespoon cinnamon powder (optional)
- 1 tablespoon yeast
Preparation
Step 1
Preheat oven to 350 degrees
Lightly grease a loaf pan with coconut fat and dust with tapioca flour, reserve
Step 2
In a large bowl add the banana flour, psyllium husk flour, tapioca and the yeast, reserve
Step 3
In a blender add coconut milk, coconut fat and coconut sugar, eggs, green plantain sliced, cinnamon and salt, pulse until the mixture is homogenous, 3-4 minutes
Step 4
Gradually pour the liquid mixture (third step) into the dry mixture (second step), frequently stirring with a large spoon
When a dough is formed, use your hands (use a little bit of coconut fat in the hands to not stick the dough on it), knead the dough well, 3-4 minutes
Shape into a loaf
Place in the greased loaf pan (first step)
Bake for 60 minutes or until golden brown
Step 5
Carefully remove from the oven and allow bread to cool before serving to *increase the health benefits of the fibers used in this recipe.
