Roasted Chicken Breast Stuffed with Dried Prunes Jam and Wrapped in Bacon
Serves: 4
Time Preparing: 20-30 minutes
Time Roasting: 60 minutes
Total Time: 80-90 minutes
Ingredients
. 1 large grass-fed chicken breast skin on cut in two halves, and butterflied (see instructions below)
. 8-10 bacon strips
. 2 garlic cloves, minced
. 2 tablespoons of ghee (melted)
. ½ teaspoon sea salt
. Freshly grounded black pepper
For prunes jam
. 16 ounces dried prunes, no stones
. Filtered water enough to cover prunes
Preparation
Step 1 (prunes jam)
In a saucepan add dried prunes and cover with filtered water
Over medium/low heat simmer prunes until tender, 20-25 minutes
Carefully, pour cooked prunes into a blender or food processor, pulse until smooth, 1-2 minutes, reserve
Meanwhile the prunes are cooking
Step 2 (butterflying chicken breasts - keep the skin on)
Place one chicken breast at a time on a cutting board with the skin facing down
Place one hand on the top of breast, curving your fingers up slightly for safety
Using a sharp knife cut breast from the thinnest end to almost the end of the thicker side, stop before cutting all the way long
Place the knife back into the center of the thicker side of the breast cutting to almost the end of the opposite side, opening out to look like a “three pages flyer” or as a butterfly (as this cut is named) Repeat the same process with the remaining chicken breast, reserve
Step 3
Combine in a large bowl garlic, sea salt, grounded pepper, and 1 tablespoon of the melted ghee (reserve 1 tablespoon of ghee for roasting)
Carefully rub this mixture on both sides of the breasts
Keep for 5-10 minutes into refrigerator
Step 4
Preheat the oven 350 degrees Fahrenheit
Step 5
Place chicken breasts flat on a cutting board with skin facing down
Using a spoon, spread half of the prunes jam evenly over the breast
Carefully roll up the chicken breast so the prunes jam is completely inside
Wrap each chicken breast with bacon strips (if you need use toothpicks to hold it)
Carefully place bacon wrapped chicken breasts in an oven resistant dish
Step 6
Roast chicken breasts for 60 minutes
Step 7
Carefully remove from the oven
Transfer roasted chicken breasts to a serve plate
Slice and serve
