Balsamic Roasted Vegetables

Serve: 4-6


Time Preparing: 20 minutes

Time Roasting: 40-50 minutes

Total Time: 60 minutes


Ingredients


- 1 red onion, cut in ½ -inch dice

- 1 red bell pepper, cut in ½ -inch dice

- 1 green bell pepper, cut in ½ - inch dice

- 1 orange bell pepper, cut in ½ - inch dice

- 1 zucchini, cut in ½ - inch dice

- 1 eggplant, peeled, cut in ½ - inch dice

- ½ tablespoon cayenne, finely chopped (optional) - fresh herbs, finely chopped (optional)

- 3-4 tablespoons extra virgin olive oil (unfiltered and cold-pressed)

- 3-4 tablespoons balsamic vinegar

- ½ tablespoon sea salt


Preparation


Preheat the oven to 350 degrees F

In a large bowl combine all the ingredients but, the olive oil

Toss the ingredients to coat the veggies

Spread the veggies out over a large baking sheet

Roast the veggies for 40-50 minutes

Remove from the oven, add the olive oil and fresh herbs finely chopped, toss well to combine

Transfer the roasted vegetables to a serving bowl

Serve warm or at room temperature Leftovers can be placed in a mason jar, refrigerated for 7-10 days.

This recipe is a good option to have at hand, and used in sandwiches or a fast meal

Tips:


1- Do you know that heating olive oil destroys many of its healthy properties?

The nutrients in olive oil are very delicate, and exposures to heat, light and oxygen might accelerate oxidation.

Oxidation is the process that turns fats rancid and toxic to consume.

Adding the olive oil after roasting (heat), preserve the nutrient content.


2- Select the best quality products to prepare your food, preferably fresh, organic or, local.


3- Every time you prepare this recipe create a combination of your own favorite vegetables or use the ones available in your refrigerator.


4- The diversity of our gut flora/microbiome is directly associated to our own health and well-being.

So, in order to create a strong and diverse gut flora/microbiome, we must diversify as much as possible the food we eat.


5- Roast for 20-30 minutes if you prefer crunch veggies.
