Delicious Nut and seed Granola Paleo/Keto/Low-Carb Diet

Ingredients
1 cup organic raw sliced almonds (skin-on or off)
1 cup organic raw pecans, roughly chopped
1 cup organic raw Brazil nuts, roughly chopped
1 cup organic raw macadamia, roughly chopped
1 cup organic unsweetened coconut flakes
½ cup organic pumpkin seed
½ cup organic cranberries
½ cup organic raisins
2-3 tablespoons organic raw honey
4 tablespoons olive oil
Preparation
Step 1
Preheat oven to 300 degrees F
Step 2
Spread sliced almonds out on a baking sheet, bake until golden, 5-10 minutes (when it starts smelling it is done)
Remove it from the oven, reserve
Let the oven heat
Step 3
Carefully transfer the baked almonds to a large bowl
Add the roughly chopped pecans, Brazil nuts, macadamias, coconut flakes and pumpkin seeds, mix well, reserve
Step 4
In a small bowl add the honey and olive oil
Carefully whisk until well blended
Step 5
Pour the step 4 into the dry ingredients (step 3)
Using your hands mix well until ingredients are completely coated with the honey and olive oil mixture
Step 6
Spread the ingredients out (step 5) on the baking sheet
Bake until golden, 20-25 minutes
Remove it from the oven
Let it cool down completely
Step 7
Transfer the granola back to the large bowl
Add the cranberries and raisins, mix well all ingredients
Step 8
Store granola in mason jars or any airtight container at room temperature
Keep it for up to a week
Tips
Serve it over a bed of bad of Greek yogurt and red fruits. Decorate with strawberries and mint leaves
