Green Beans, Carrots, and Heart of Palms Salad

Ingredients for the Salad
- 4 cups green beans, trimmed, sliced and blanched
- 3 cups carrots, sliced and blanched
- 2 cups heart of palms, sliced
- ½ cup dried cranberries
- ½ cup walnuts, chopped
Ingredients for the dressing
- 2 tablespoons red onion, finely chopped
- 4-5 tablespoons olive oil
- ¼ teaspoon raw honey
- ½ teaspoon mustard
- 3 tablespoons freshly squeezed lemon juice
- 3 tablespoons freshly squeezed orange juice
- 3 tablespoons fresh cilantro, finely chopped
- ½ teaspoon sea salt
Ingredient for the top
- 4 hard boiled pasture-raised eggs, halved
Preparation
Salad dressing
Place all the ingredients in a small bowl and whisk until combined, reserve
Salad
Place all the salad ingredients in a large bowl and toss to combine
Drizzle with the salad dressing
Top with the eggs
Serve at room temperature
