Excellent Cough Syrup or Tonic to Boost Immunity
Preparation time: 15-20 minutes
Cooking time: 2-3 hours
Ingredients
1 large fresh whole pineapple, skin and core on, cut into 1-inch cubes
3 cups fresh cranberry (can be replaced by 4 Sicilian lemons sliced, skin on)
1-piece fresh ginger root finely sliced (the size of the ginger piece depends on your own spice tolerance. I use a large piece.)
3 cinnamon sticks
10 cloves
10 black peppercorns
½ teaspoon sea salt
1½ liters filtered water
2-3 tablespoons raw honey
Preparation
Step 1 (cutting the pineapple)
Remove the crown/leafy top and thoroughly rinse and scrub your fruit with a produce brush
Using a sharp knife, cut the whole pineapple (including skin and core) in 1-inch cubes
Transfer to a large pot
Step 2 (cooking the ingredients)
Add to the cubed pineapple, the cranberries or sliced lemon, sliced ginger root, cinnamon sticks, cloves, black peppercorns, sea salt, and filtered water
Bring the large pot to a low/medium heat, simmer for 2-3 hours, until the mixture is well cooked and a little bit reduced
Turn off the heat, let it cool completely
Step 3 (Adding the honey)
When it is completely cooled, add the honey, stir well to mix
Important:Never heat raw honey at high temperatures since it loses all its healing properties and becomes toxic for consumption (1)
Step 4 (preparing the tonic)
Remove the cinnamon sticks (optional)
Using a blender, gradually pulse the mixture until smooth, transfer to a bowl
Step 3 (tonic sieving)
Strain the mixture in a large sieve in order to remove undesired solid components
Store in mason jars
Keep in the fridge for 7-10 days,
For coughing - Take ¼ cup 3-4 times a day
To boost the immune system - Take ½ cup 2 times a day
